This dataset comprises transcriptomic raw sequence data from three fecal kimchi-derived lactic acid bacteria species, Lactococcus lactis subsp. lactis CBA3648, Latilactobacillus sakei subsp. sakei CBA3649, and Leuconostoc mesenteroides subsp. mesenteroides CBA3650, under varying conditions. The bacteria were introduced into germ-free kimchi (consisting of Brassica rapa subsp. pekinensis and Raphanus sativus L.), germ-free mice (jejunal-ileum, cecum, and large intestine), and basal media at different temperatures (low and high). Transcriptomic sequencing was carried out using the Illumina NovaSeq 6000 platform.
